It hasn’t been a stellar year in my back yard garden, much too cool and wet, but I did manage to get some tomatoes and basil for a delicious Orzo and Caprese salad.
This is a dish that I make up as I go along. It really just depends on how many tomatoes and how much basil I have on hand.
Orzo Caprese Salad:
- Cooked Orzo
- Cherry tomatoes – halved
- Basil – sliced into ribbons
- Mozzarella Cheese – smaller balls – optional
- Extra Virgin Olive Oil
- Really good Balsamic Vinegar
- Freshly Ground Pepper
- Kosher Salt
Toss all ingredients together in a bowl. Add more as needed to taste.
