Pork Chop Skillet

 

 

A family favorite for a week night meal in a hurry.

 

Pork Chop Skillet

4 trimmed pork chops

1 can (10 3/4 ounces) low sodium, low fat chicken broth

3/4 cup water

1 can (1 pound) diced tomatoes

1 1/2 cuts fine noodles

salt and pepper

 

In a skillet brown pork chops using cooking spray if necessary; drain off fat.  Add chicken broth and water.  Cover pan; simmer 15 minutes.  Add tomatoes and noodles; season to taste with salt and pepper.  Cover; cook 15 minutes longer or until noodles are tender, stirring often.
