Recipe: Pumpkin Cookies

 

I don’t know where YOU are today but in NE Ohio fall is in the air.  Time to roll out some of the cool weather favorites!
Pumpkin Cookies

1/2 cup shortening

1 cup sugar
2 eggs, beaten
1 cup pumpkin
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 cup chopped nuts

 

Cream shortening, add sugar, cream until fluffy, add eggs and pumpkin, mix well.  Add dry ingredients.  Bake at 350° for 15 minutes.  Leave unfrosted or dab a bit of your favorite frosting (colored orange of course) on the top.

BTW I have substituted the 1/2 cup shortening with 1/2 cup applesauce to make them fat free and it wasn’t half bad…so if that 1/2 cup of fat turns you off try the fat-free version. Let me know what you think!
