Easy Peasy Lemon Bars Recipe
It’s not often that I turn on the oven in summer but my husband has been working really hard lately and I wanted to do something extra special for him. He loves almost anything LEMON. So I quickly baked up a batch of my Easy Peasy Lemon Bars and even more quickly snapped a picture of them. Good thing too because they were GONE in no time at all!
Maybe I should re-name them “Gone with the Wind Lemon Bars”!
Easy Peasy Lemon Bars
1 1/2 cups unbleached flour
2/3 cup confectioners’ sugar
3/4 cup butter, softened
3 eggs
1 1/2 cups white sugar
3 Tablespoons unbleached flour
1/4 cup fresh squeezed lemon juice
Confectioners’ sugar for dusting
Preheat the oven to 375° and grease a 9″ x 13″ baking pan
Combine flour, 2/3 cup confectioners’ sugar and butter into a soft dough. Pat the dough into the greased pan to form the crust.
Bake the crust for 20 minutes in the preheated oven until slightly golden. While the crust is baking, whisk together eggs, white sugar, flour and lemon juice until frothy.
As soon as the crust is pulled out of the oven pour the filling on top.
Return the pan to the hot oven for an additional 20-25 minutes or until everything is a light golden brown. Cool on a wire rack for 20 minutes. Dust the top with confectioners’ sugar.
Cut into squares when completely cool and serve.
Of course the number of servings depends on how big you cut the squares. 😉
