I made up this recipe a few summers ago and it has become one of my families’ very favorite summer side dishes. If you say “Fat Free” around here people are skeptical. But this is packed with lots of flavor and fiber but no fat and very little sugar.
I’m going to give this recipe to you the way I make it. A handful of this, a bit of that and a pinch of the other.
I don’t grate the cabbage. Instead, I use my big knife and slice it very thinly.
One unpeeled Granny Smith Apple, finely chopped.
Add a generous handful of craisins.
For the dressing I use Fat Free Miracle Whip, juice from half a lemon, a dash of salt and a teaspoon (more or less) of sugar. The amounts you use will depend on how much cabbage, apple and craisin you have used. Just eyeball it. Look at the bowl of slaw and the amount of Miracle Whip and determine if it looks like enough to cover the slaw. Taste the dressing and add until the flavor is right.
Whisk together and pour over cabbage and fruits.
Mix well and chill.
That’s all there is to it. It takes about 5 minutes to put together… perfect for weeknights!
