It’s almost Memorial Day and time for lots of those cold salads we all love; potato salad, macaroni salad and cole slaw.
This is the dressing for potato or macaroni salad that I grew up with. I’m not sure of it’s origin. My mother’s mother is German and I know it’s not like German potato salad… so I’m not really sure where it came from. Maybe my Irish Grandfather? I don’t know? Anyway, my mom used this same dressing recipe for potato and macaroni salads.
1/2 cup apple cider vinegar
3/4 cup sugar
2 eggs, beaten
1 teaspoon turmeric
Celery seed
2 teaspoons dry mustard OR wait until the dressing is cooked and add your favorite mustard from a jar
salt, to taste
1 teaspoon cooking oil
Put all ingredients into a pot and cook over medium heat until thick; stirring constantly. Once it’s thick I pour it into a Mason jar for storage (don’t bother to wait for it to cool – you can store it in the refrigerator for a week or two). When assembling macaroni or potato salad add this salad dressing to about equal parts mayonnaise or Miracle Whip (I use Miracle Whip Free because of W’s cholesterol). Whisk together and stir into salad.
