All this week I’ve been writing about the bushel of peaches I purchased from my neighbor and all of the lovely things I’ve been doing with them.

But you just can’t can ALL of those lovely peaches and not enjoy some of them right away. At least I don’t think so. So I thought I would share my recipe for Peach Crisp.
Peach Crisp
5 cups of sliced, pitted and peeled peaches
3 Tablespoons sugar
1/2 cup rolled oats
1/2 cup packed brown sugar
1/4 cup all purpose flour
1/4 teaspoon cinnamon
1/4 cup butter
1/4 cup chopped walnuts
Place the sliced, pitted and peeled peaches in a 8x8x 1 1/2 inch baking dish.
For the topping: in a bowl combine oats, brown sugar, flour, and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Stir in the nuts and sprinkle over the peaches.
Bake at 375 degrees F for 30-35 minutes or ntil fruit is tender and topping is golden.
And of course, my VERY favorite way to enjoy Peach Crisp is with a very good French Vanilla ice cream while the Peach Crisp is still warm from the oven.
HEAVEN.
Delicious and comforting, the perfect combination! Thank you for this delicious recipe
