Recipe: Lite Chicken Salad

 

I’ve been trying not to eat out very much the past several months and I have been doing well about eating at home.

Except that I LOVE the Pecan Chicken Salad at Arby’s. It’s about the ONLY thing I like there but, there you have it, I’m a chicken salad junkie. 😉

Besides the fact that it’s expensive it’s also loaded with a ton of FAT so I decided to play around and try to come up with my own version that’s better for me.

 

Lite Chicken Salad

 

1/3 cup Miracle Whip Free

1/3 cup nonfat yogurt

2 teaspoons lemon juice

dash of salt

3 cups cooked chicken breast – chopped

1 medium red apple – diced

1 cup halved, seedless grapes

1 cup thinly sliced celery

1/2 cup chopped pecans (or walnuts)

 

Whisk Miracle Whip, yogurt, lemon juice and salt in a large bowl. Add remaining ingredients and mix to coat well.

This is great on a bed of greens as shown or in a sandwich or roll up.
