Recipe: Turkey Meatloaf

 

Meatloaf is one of my very LEAST favorite dishes but my family LOVES it… they think my meatloaf is pretty great. Who am I to argue?

I make my meatloaf with ground turkey because we don’t eat red meat and I bake it in a special pan that lets what little fat there is drain off into the bottom. Often I make double the recipe of the sauce because everyone LOVES it.

 

Turkey Meatloaf

2/3 cup dry bread crumbs

1 cup fat free milk

1 1/2 pounds ground turkey

2 eggs, slightly beaten

1/4 cup chopped onion

1 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon ground sage

 

Sauce

3 tablespoons brown sugar

1/4 cup catsup

1/4 teaspoon nutmeg

1 teaspoon Dijon mustard

 

 

Combine all ingredients except sauce. Spoon into loaf pan; press to make even. I run little grooves in the top with a fork so that the sauce clings to the meatloaf better. Bake at 350° degrees for 1 hour.

Mix ingredients for sauce and spoon over meatloaf.  Bake another 15 minutes. Makes 6 servings at 6 Weight Watchers Points per serving.

    i made the meat loaf- with beef and put sauce on it soooo good everyone loved it !!!!
