Recipe: Apple Walnut Pudding

 

I shared this photo on my facebook page yesterday saying, “Tea time in the studio and you are all invited.”

Just in case you couldn’t be here in person I thought I’d share the recipe.

 

Apple Walnut Pudding

2 eggs

1 cup sugar

3/4 cup unbleached, all purpose flour, stirred and measured

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla

3/4 cup chopped walnuts

1 1/2 cups diced, unpeeled, raw apples

 

Beat eggs until fluffy. Add sugar, gradually, beating thoroughly after each addition.  In a separate bowl sift together flour, baking powder, salt and spices.

Add the dry ingredients to the wet ingredients gradually, beating thoroughly after each addition.

Fold in vanilla, nuts and apples. Pour into well-greased 8 inch square pan.

Bake at 325° F for 45-50 minutes.

Serve with French Vanilla ice cream or slightly sweetened whipped cream.

Makes 8 servings
