Yeah, I’m not a morning person either and that chipper shit first thing in the AM could get ya killed. What won’t get ya killed is feeding me a healthy breakfast with a 5 gallon bucket of coffee on the side.
Yeah, that’ll do it.
Here is how it’s done:
On a good meal prep day or while making dinner the night before slice a zucchini that got too big into thick slabs. Brush a little EVOO on both sides and season with salt and pepper.
Place on a hot grill for about 10 minutes on each side. You want the zucchini to be cooked yet still firm. Let cool and place in a container in the fridge.
The next morning while the coffee is brewing …
Warm the zucchinni in the microwave or skillet. Fry a couple of eggs, over easy, with a bit of salt and plenty of pepper.
Place the eggs on top of the zucchini slices.
Swish a few cherry tomatoes under running water and place on the side. Tomato slices will do too.
Fill your 5 gallon bucket with coffee and suddenly, you are my favorite human on the planet.
