I don’t make pastries for breakfast around here very often so when I pull this out of the oven everyone knows it’s a special occasion. We love this yummy Streusel Coffee Cake on Christmas morning before opening presents but you can make it any time you feel like making something special.
The best part is that you can assemble it the night before, wrap it up tight and then unwrap and bake the next morning.
Streusel Coffee Cake
Streusel*
1 1/2 cups unbleached flour, stirred and measured
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup sugar
1/4 cup soft shortening
1 egg, beaten
3/4 cups milk
Prepare Streusel and set aside. In medium mixing bowl, combine all ingredients and beat on medium speed of mixer for 1 minute or until ingredients are mixed.
Spread half of the batter in a greased and floured 8 inch square baking dish; sprinkle with half of the Steusel.
Spread remaining batter over top and sprinkle with remaining Streusel. Bake at 375°F for 25-35 minutes.
*Streusel: Combine 1/2 cup brown sugar, 2 Tablespoons flour, 2 teaspoons cinnamon, 2 Tablespoons melted butter and 1/2 cup finely chopped nuts.
