I’m a bit of a soup junkie. Not that stuff that comes from the store loaded down with salt and chemicals but the GOOD stuff. The kind that is made from ingredients I chop up myself, that simmers on the stove for a while and makes me hungry long before meal time. The kind that makes my family smile when they walk in the door shedding layers of scarves, gloves and coats. THAT kind of soup. This is a good weekend for soup too as many of us are waiting a winter storm. National soup month AND winter storms – the perfect time to try a new recipe.

I love soup, too. Virtually any kind of soup! Before I retired I often had soup for breakfast because I love it and on a cold winters day working outside it helped keep me warm. I still make soup frequently and a good dinner to me is a wonderful bowl of soup, chock full of healthy things and some crusty bread with some real butter or a toasted cheese sandwich. Yum! I LOVE ,LOVE, LOVE soups! I love eating them all year long. In the summer, they are a light meal when you’ve spent the day working hard outdoors.
I have to admit Carol that I don’t think about eating soup much in the summer. I’ll have to try it.
